The Daniel Fast

Hello, COF Family!  Well, we are three days in to the 21 day Daniel Fast.  How are you making it?  This blog has been set up as a means to share information, ideas, or simply offer inspiration during this corporate fast. Please feel free to post your thoughts and prayers!  God Bless!

Good morning! Well, its day three and I am glad about it! I have some ideas to share with my COF family as we journey through the next 18 days together.

There is a butter substitute named Earth Balance. You can probably find it at most stores, however, I bought it from Walmart. This tastes just like the real thing! It is dairy free, gluton free, lactose free, and soy free! Its costs about $3 a tub but it is well worth it!

Also, for you cereal lovers like myself, there is a ceral by Kashi called Cinnamon Harvest. Its looks like shredded wheat but it tastes a thousand times better. I tried it last night with some almond milk and it was good. The almond milk is questionable but the cereal is great.

I personally am a huge fan of Indian food. They have alot of vegetarian/vegan dishes.Although many of these are very easy to make, finding the spices can be a pain. The only place you'll find these locally are at place called Balaji Indian Food located at 4325 Calder Avenue. They are pretty inexpensive.

ALOO GOBI
Ingredients:
Cauliflower – 1 medium, cut to bite size florets
Potatoes – 2 large, cut to bite size pieces
Frozen Green Peas – 1 cup
Oil – 2 Tbsp
Cumin Seeds – 1/2 tsp
Asofoetida (Hing) – pinch
Turmeric Powder – 1/2 tsp
Onion – 1 medium, finely chopped
Ginger – 1 inch piece, minced
Garlic – 5 cloves, minced
Tomatoes – 2 large, chopped
Coriander Powder – 2 tsp
Cumin Powder – 1 tsp
Garam Masala – 1 tsp
Red Chili Powder – to taste
Dry Mango Powder (Amchur) – 1/2 tsp
Salt – to taste
Cilantro – 5 sprigs, chopped for garnishing
Method:
1. Heat Oil in a medium non-stick pan.
2. Add Cumin Seeds and allow them to sizzle.
3. Add Asofoetida, Turmeric Powder and Onions — mix well and sautee for 3-4 minutes.
4. Add Ginger and Garlic — mix and sautee until Oil starts to separate from the onions (stir frequently).
5. Add Tomatoes — mix and cook until Oil again separates from the mixture (stir frequently).
6. While tomatoes are cooking, place Potatoes in a microwave safe bowl w/ cover, sprinkle a little salt, add 1/4 cup water and microwave for approx 3-5 minutes (they should be 1/2 cooked).
7. Place washed Cauliflower florets in a microwave safe bowl w/ cover and cook for approx 3-5 minutes (it should be 1/2 cooked). Lightly Salt the Cauliflower while it is still warm.
8. Once Oil has separated from the tomato mixture, add Coriander Powder, Garam Masala, Red Chili Powder, Cumin Powder, Dry Mango Powder and Salt — mix well.
9. Add half-cooked Potatoes, mix well to coat all potatoes, cover and cook for 5 minutes (or until the potatoes are tender but not breaking apart).
10. Add Green Peas and half-cooked Cauliflower and mix well to evenly coat the cauliflower — cover and cook until all veggies are tender but not mushy and falling apart.
11. Garnish with chopped Cilantro Leaves and serve with Chapatti, Paratha or Rice and Daal.


ALOO MUTTER

Ingredients (use vegan versions):

2 or 3 potatoes (use two if they're big, 3 if they're smallish)
2 tomatoes, chopped
1/2 cup peas (I use canned sweet peas)
4 tablespoon soy margarine ( I personally like Smart Balance with *Flax)
1/2 to 1 meduim onion, chopped, (depending on how much you like onion)
2 garlic cloves, chopped OR 1 1/2 to 2 teaspoon garlic powder
2 cloves
2 bay leaves
1 cinnamon stick
1 teaspoon garam masala
1 teaspoon chili powder
1/2 teaspoon turmeric
1/2 teaspoon coriander powder
salt to taste

Directions:

1. Heat margarine in a pan on stovetop at medium temp.

2. Add onion and saute until golden

3. Add cloves, bay leaves, cinnamon stick, and garlic and stir fry 2 min.

4. Add garam masala, chili powder, turmeric, coriander, tomatoes, and salt. Mix together well.

5. Add potatoes. Pour in water and bring to a boil.

6. Add peas and lower heat. Cover. Let simmer 15 min. (until potatoes are soft and done)

Serves: 3-4


VEGAN CHILI


    3 tablespoon olive oil
    3 chopped onions
    1 tablespoon chili powder
    1 tablespoon ground cumin
    1/4 teaspoon cayenne pepper
    2 peppers, chopped
    3 garlic cloves, chopped
    3 tablespoon unsweetened cocoa powder
    1 large can, undrained, of tomatoes, chopped
    1 cup water
    1 can red kidney beans, rinsed & drained
    1 can black beans, rinsed and drained
    2 cups fresh or frozen corn
    1/2 cup bulgur or meatless meat (This can be found in the frozen vegetarian meat section)
    salt and pepper
    cilantro (optional)

Directions:

In a large pan, saute the onions and spices.  Add peppers and garlic for 1 min. Add cocoa, tomatoes, and water; bring to a boil. Add kidney and black beans, corn and bulgur.  Reduce heat to low and simmer, uncovered, for 15 min. or until bulgur is cooked.  Add salt and pepper to taste.  To serve, sprinkle with  cilantro.




VEGAN CORNBREAD
Vegan Corn Bread is the perfect addition for Chili. Serve vegan corn bread. Follow the easy recipe below to make cornbread.

Things You'll Need:
· 1 Cup Cornmeal
· 1 Cup Flour
· 1 Cup Soy or Nut Milk
· 1/3 Cup Vegetable oil
· 1 Tbs Baking powder
· 1/4 Cup sugar
· 1 tsp Salt
· 8 Inch cooking pan

1. In mixing bowl, combine all of the dry ingredients and mix well.

2. Lightly oil the cooking pan and set aside. Preheat the oven to 400 degrees.

3. Stir well until all large lumps are gone. Don't worry about any small lumps. Make a well in the center of the bowl and pour in the soy milk and oil.

4. Pour the corn bread batter into the baking pan and bake in the oven for 20-25 minutes. Check for doneness by inserting a toothpick or knife in

What is a fast without Smoothies?!?!?

SMOOTHIES

½ cup soy or almond milk
1 ½ cup of frozen fruit (the frozen fruit takes the place of ice- resulting in something that’s cold but very rich and flavorful.
1 medium sized banana
*Also check out rice cheese, and veganaise which you can find at Basic Foods.

BRANDI's SOUP
You'll need:
1/8 cup Vegetable Stock or Vegan Chicken Stock (powder) *This may vary depending upon they type you use.
Medium bag of baby carrots
3 celery sticks
2 small potatoes
1 medium onion
1/4 cup brown rice
2 tsp olive oil
1 tsp liquid smoke
1/2 tsp cumin powder
cayenne pepper (to taste)
salt and pepper (to taste)

In a large pot, add in olive oil, vegetable stock, and water. Bring to a boil, add in brown rice and reduce heat. After about 5 min, add in carrots and potatoes. Cover and let simmer for about 20-25 min. Once veggies are tender, you may then add in onions and celery along with cumin, cayenne pepper, liquid smoke, salt, and pepper. Cook on low for about 10-15 min allowing the flavors to mesh. This soup works well with toasted peaunut butter on whole wheat bread.

Need some flavor in your life? Sometimes veggies dishes can become a bit redundant. The 9910 Dish will definitely change your tune. Hope you enjoy…

What you’ll need:

1 Purple Cabbage
1 medium can of Cannelli beans (white beans)
1 green pepper
1 medium onion
1 cup Diced Tomatoes
3 tbs olive oil
4 tbs soy sauce
¼ cup Worcestershire sauce (to taste)
Salt and pepper (to taste)

Begin by cutting cabbage and placing in a large pot. Steam for about 20 minutes or until cabbage is tender. While cabbage is steaming, add olive oil, diced tomatoes, green peppers, onions, a little salt and a generous amount of pepper in a separate pan and saute on low temperature for about 10-12 min. Once cabbage is tender, drain any excess water and add in tomato saute. Mix well. Add Canelli beans once they have been drained and mix, gently. Add in soy and Worcestershire sauce and simmer on low for about 8 minutes or until the majority of juices are absorbed. This dish should not be dry; in fact quite the contraire. It’s a very juicy savory dish with unique flavor.

Remember to not add too much salt to this dish. Worcestershire sauce grasps salt quickly. This dish should be served with Jamaican dumplings. Stay tuned…there’s more to come!


JAMAICAN DUMPLINGS

2 Cups Wheat Flour
1 cup Water
½ tsp. sea Salt

Mix flour and salt together in a cooking bowl. Add half a cup of water to the mix, and then use your hand to knead the flour.

The flour will look like crumbs; when this happens add a little water each time, and knead until the dough is made and the water is finished.

If you need to add a little bit more water please do so, but do not let the dough get sappy and soft.
Now tear off pieces of dough about the size of a golf ball and place them in the same bowl for about 20 minutes. In the meantime, go ahead and do whatever else you have to do to past the time.

Come back and take the golf ball size pieces of dough and roll them between your palms to make them feel smooth. If you are right-handed, use the right heel of your palm to press the piece of dough until it is flat.
But you must leave a dent in the middle of the dough. (I don’t know why, it’s been that way forever) the Jamaican dumplings will cook faster I suppose.

Bring a pot of water to a boil; add the flat pieces of dough to the pot. Cook for 25 minutes and… Voila! Jamaican Dumplings are ready.
